Israeli Feta and Sweet Potatoes

Ingredients:

-Sweet Potatoes
-Olive oil
-Salt
-Black pepper
-Israeli Feta
-Fresh thyme

Instructions:

  1. Oven Preparation:

    • Begin by preheating your oven to 350°F (180°C), ensuring it reaches the correct temperature for even cooking.

  2. Prepare the Sweet Potatoes:

    • In a large bowl, gently toss the sweet potatoes with a generous drizzle of olive oil, ensuring they are evenly coated. Season with salt and black pepper to taste.

  3. Baking the Yams:

    • Line a baking sheet with aluminum foil for easy clean-up. Arrange the seasoned sweet potatoes on the sheet, spreading them out to allow for even cooking.

    • Place the baking sheet in the preheated oven and bake for approximately 40 minutes. The yams should become caramelized and tender. There's no need to turn the potato chunks during baking.

  4. Cooling:

    • Once baked, remove the sweet potatoes from the oven. Allow them to cool to room temperature on the baking sheet or transfer them to a cooling rack.

  5. Final Touches:

    • Transfer the cooled sweet potatoes to a serving bowl. Taste and, if necessary, adjust the seasoning by adding a little more salt and pepper.

    • Crumble the Israeli Feta cheese over the top of the sweet potatoes, adding a creamy and tangy contrast to the sweet and earthy flavors.

  6. Garnish and Serve:

    • Finally, sprinkle freshly chopped thyme over the dish for a fragrant and herbal finish.

    • Serve and enjoy this delightful combination of sweet, salty, and herby flavors!
